See those two little windows up near the peak of the roof? That's the attic. Cardboard insulation, blown in. Swept it all into feed bags. Inside the feed bags, the insulation got hung up in the rafters. Meanwhile, in the opposite room, was storage under a low ceiling. A wall separates the two rooms Waffles between the rafters ensure the air circulates easily between the insulation and the timbers. Lots of feed bags, lots of insulation. Meanwhile, the plaster ceiling came down in Room #2. Hung waffles and insulation on the pitched roof above. Not sure if the ceiling beams are structural, so for now they'll stay where they are. Next step: wallboard. Those wallboard lifters are a real labor-saver when you're hanging board on a pitched roof. Making closets on either side. Pretty much covered up. Next: sealing the seams, sanding.
